Proziak burger, despite the similar meaning of the name, has nothing to do with “piglet”. The first part of the name of our restaurant, or “proziak,” is the name of the regional bread traditionally baked on tile stoves, consisting of flour, kefir, salt, butter and soda, which is called ‘proza’ in the Sub-Carpathian region – hence the name of baking, which can be translate as soda bread. Traditionally, “proziaki” is served as a substitute for bun or bread, most often served with garlic butter. We decided to transfer this Polish specialty, which is rather unknown in other parts, to the arena of Warsaw street food. We serve proziaki on the spot in the form of burgers, creating various flavor compositions, combining elements of regional cuisine, as well as compositions based on ingredients from different culinary worlds, adhering to the principle that the kitchen has no limits. Our flagship ingredient, which is the basis of proziak burgers, is lamb from an ecological farm located in the Żywiec Beskids. We focus, on sometimes forgotten meat, because of its taste and health benefits. The most important thing for us is quality, so our lamb is imported from a small organic farm to provide our customers with the best possible taste experience.
